egg salad w/ olives and sweet pepper relish
Has anyone been baking? I haven't. And lately I consider baking to be putting together a salad in this hot weather. Why? Because my body is baking while doing it. Heatwave indeed. I really don't mind the heat so much as the humidity we've gotten on the cape is brutal, like rainforest brutal you know? And I'm getting kind of tired of sleeping with A/C on; I miss those nice cool breezes at night.
So as of late we've been eating a lot of hummus rollups, salads, and sushi. I have not been eating ice cream as I had a bad cold and need to watch the dairy intake. But I have been enjoying those coconut milk ice creams by Turtle Mountain. Have you tried them? I was amazed at how much they tasted just like dairy and yet it's dairy free. My favorite is the chocolate/pb (of course, no surprise there).
So if you're like me these days and loathe turning the oven on, would rather stay in your bathing suit all day (yes all day morning to night just so you're prepared at a moments notice to jump in the pool or ocean). Well ok you have to turn the oven on for this one, to boil the eggs. This is a fast easy meal with my favorite way to eat: layers of flavor. Complete with black olives, sweet pepper relish, romaine lettuce all served on warm garlic Naan. It's also great with green olives and chopped pimentos too.
What do you like to put in your egg salad? Have you ever kicked it up a few notches?

I love coconut milk ice creams! Have you tried Coconut Bliss? It is really good, too. Love the coconut and vanilla!
ReplyDeleteI did bake granola and bars this weekend. I can't stay away- baking is such great stress relief for me. That bread looks awesome. I usually don't do egg salad because I don't like mayo, but I'm all for an egg sammy!

ReplyDeleteCoconuts are just amazing, the milk, the oil, the meat - it's all good! I have tried another brand of coconut milk ice cream and it was very good! Peanut butter and chocolate would be my fave also!
And I hear you on the heatwave front...although we did have a nice thunderstorm last night which cooled things off a bit.

ReplyDeleteOh, I can think of a couple things that would be total awesomeness in an egg salad! Sweet chili sauce or some sambal oelek, or perhaps layering that sandwich out with some fresh avocados, or how about some tasty kosher dill pickles?
ReplyDeleteLOVE coconut milk ice cream, i even made some myself last week :) i turned on my oven early this morning... trying to beat the heat. i usually go for tradition when it comes to egg salad, with lots of dijon :) what can i say, i love it!

ReplyDeleteI make egg salad the way my mom used to. With celery and mayo. I like living on the edge. :) This looks about 1 million times better than my version and I can't wait to try it. Come visit! It's 75 and perfect here.

i just made an egg salad using leftover dip made from sour cream/mayo. i do not recommend doing this - too salty!!!
ReplyDeleteGirl, you know how to eat an egg salad. This is a kicked up sammie and makes you forget about turning on the oven to make a meal. It's perfect for summer. I am going to try and find out more about those Turtle Mountain coconut pops. Giving up the dairy will be hard but those might just make it easier....and tastier.

ReplyDeleteThat egg salad looks divine. I don't know why but I've got the oven on all day today and I'm paying the price. Apartment is stifling hot and I'm sweating. But I just really wanted to make roast chicken and am testing popover recipes (which require super high heat!). Oven is off now - hopefully the apartment cools down before my husband's single friends who can't feed themselves come over for dinner. I should have made them egg salad sandwiches =)!
ReplyDeleteI've always enjoyed a good egg salad sandwich, but I've never had one that looked anywhere near as great as this! BLTs will now have to move over as my favorite, easy meal.

ReplyDeleteEgg salad is a rare treat. Maybe because boiling and peeling all those eggs can be annoying, BUT when it's all done, it's so good. Love to add dill, so maybe tossing in some olives will be a nice way to go Greek with it.
