double chocolate-butterscotch muffins



Everyone raved about these double chocolate-butterscotch muffins when they first came out on thekitchn.com. And now a couple years later I'm finally trying them.
They are good, a tiny bit dry on the inside. I think it was the baking times that made them dry though. My gut tells me to have taken them out sooner (amazing how the baking gut always knows right?). But the overall flavor is really good. The butterscotch takes it right over to a good flavor edge. I'm certain that on the next batch I need to lessen the cooking time and that should make them less dry on the inside. So if you do make these, really watch the baking time; says to bake them 17-20 minutes, but I'd check them at the 14 minute mark.
Best part? Very quick and easy to whip up! Plus we all know, almost every baker has leftover butterscotch chips in the cupboard waiting to be used up--this is it.

  1. They look great but ikwym about dry things...NOT a fan. At all. I always underbake & on something like those, I would have been so tempted to add a dollop of PB...usually cures dryness but does impart, well, PB flavor. It's an art to keep a true chocolate/cocoa powder muffin not dry. Thanks for the recipe and review. Gorgeous pics!

  2. I have found butterscotch chips to have an almost acrid "fake" flavor. I can make my own butterscotch sauce, pudding... but I would dearly love to know how to make my own butterscotch chips. Any ideas?

  5. These look delicious! (I always trick myself into thinking things are healthy by calling them muffins - I do a similar thing with oatmeal raisin cookies).

  6. Sometimes baking chocolate things can be tricky. It can be hard to tell when they're done enough without poking them. Give them another go. They'll be moist and delicious.

  7. I don't remember the baking time I did on these, but it must have been shorter because my old oven was cray cray! I made them for coworkers and for a bake sale and people loved them!

  11. Haha, yes! Everyone's got a partially used bag of butterscotch, white chocolate, or pb chips lying around, don't they? Don't they? I do. They just aren't tasty enough to eat by the handful. But add them to baked treat, and they're fantastic!

    I'll have to try these--I haven't made muffins in a while and I'm getting twitchy.
