Well, here is the latest blueberry muffin recipe I found. This one uses a crumble topping. Nothing like a good blueberry muffin with some coffee cake crumbies on top.

Muffin batter:
1 ½ cups all-purpose flour
½ cup white sugar
½ ts salt
2 ts baking powder
¼ cup vegetable oil
1 egg
1/3 cup whole milk
1 cup fresh blueberries
Crumb topping:
½ cup white sugar
1/3 cup all-purpose flour
¼ cup butter, melted
1 ½ ts ground cinnamon
Cook Notes:
If you like a lot of crumb topping like I do, then double the ingredients in the crumb toppings.
Preheat oven to 400 degrees.
Grease muffin cups or line with muffin liners.
In a separate bowl combine the flour, sugar, salt and baking powder. Whisk together to fluff it all up.
In a separate bowl mix vegetable oil, the egg and milk. Combine well. Incorporate the wet with the dry. Do not over mix, only mix till just combined; it's ok to have lumps! Next fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
Make the crumb topping by mixing the sugar, flour, butter, and cinnamon.
Mix with fork, and sprinkle over muffins before baking.
Bake for 20 to 25 minutes in the preheated oven, or until done.

ReplyDeleteI am so making those - I have never seen a blueberry muffin with crumbs on top! Note to self - Buy blueberries this weekend :) And I love Alton's show, and how each episode is devoted to one specific thing.

ReplyDeleteI love muffins and those looks fantastic, but (and I hope you don't hate me now) I don't like blueberries. I don't know why, they've just never done it for me. I bet these muffins would be great with strawberries or raspberries though. ;)

ReplyDeleteI am in search of the perfect blueberry muffin. On my blog I have made a couple of them, but then I got muffined out. I still have a couple on my lost to try. It's fun trying different recipes though.
ReplyDeleteI pretty much never have muffins, but I love that you put a crumb topping on these. I have never made blueberry muffins, but there are blueberries all over the farmers market so may have to try that soon.

ReplyDeleteBlueberry muffins are my favorite and the crumb topping just make them sublime. That's the way my Grandma always made them.

I took a walk on the beach today to get a little vitamin D therapy. It helped alot.
Hahahhaa, okay, once again I have to agree with you on the crumb topping. I think we both should come up with a recipe that involves more topping than muffin...

ReplyDeleteI went and picked a slew of blueberries last summer and have my stash in the freezer-I think some just found a home in these babies.
Oh yeah-like you, I keep blueberry muffins in the freezer at the ready-have a batch of Jordan Marsh ones in there right now....hmmmm....I think I need one.....:)
I love the addition of a crumb topping and my daughter would love these. One day we will get together and you can bring these, ok? We'll eat the whole batch and chat the day away.

ReplyDeleteGreat looking muffins! It's funny you mention that they freeze well. I really like blueberry muffins straight from the freezer. I slice them into coins and eat them like cookies but still frozen.

ReplyDeleteCrumb topping anywhere makes me salivate instantly. That crunchy sweet thin layer just does it for me. Now that I took that out of my system let's discuss muffins. I love blueberry ones (who doesn't anyway?) but blueberries are not so comun here and when I do find them they're soooooooo expensive that I'm usually happy just looking at yours, so keep'em coming!

ReplyDeleteMade these today and they were sooo good. Loved the crumb topping.Will definitely make these again. I made mine using half white flour and half white whole wheat flour. They were nice and moist.
