cake mix muffins


I must be the only person on the planet that did not know this. Cake mixes make wonderful last minute muffins. You all know this already right? I feel like an idiot. Rarely do I buy cake mixes, but when I made the cake pops I got an extra box just in case (don't all the foodies always get an extra this or that to store/hoard?). So when the cake mix box meets the 3 pounds of blueberries I have sitting err rotting away in my fridge I said why not? Let's give this a go. And I added on some crumb topping too.
These were definitely quick and easy to make, but a little too sweet for me. Cake mix was very sweet when mixed with the blueberries and crumb topping. But the overhang edges, or the muffin tops were good. Crispy edges are the best part! I always overfill my muffins tins just for the crispy edges--I'm badass like that.
But if you ever need a last minute muffin and have very little time, these will come in handy. But you already knew that....



cake mix blueberry muffins w/ crumb topping

muffin batter:
1 box of yellow cake mix
1 pint of blueberries

crumb topping:
1 cups flour
1 cups packed light brown sugar
½ teaspoons coarse salt
½ TB ground cinnamon
1 stick unsalted butter, melted & cooled

Preheat oven to 350 degrees. Grease up jumbo muffin trays (mine got 12 jumbo).
In a bowl mix all the ingredients for the crumb topping, set aside.
Mix up the cake batter according to box directions. Fold in the blueberries carefully.
Fill up the muffin cups about ¾ full, sprinkle on the crumb topping.
Bake for about 30-40 minutes? Can’t remember but check them at the 30 minute mark.
I got 12 oversized muffins. I would imagine about 24 regular size?

  3. First off- love your header picture. Makes me hungry :) And these look fantastic- especially with the crumb topping. Since they're a little on the sweet side- I think they'd be perfect for a Sunday brunch, don't you??

  5. News to me! And I store/hoard ingredients.. currently in my pantry: 3x shortening, 5x Earth Balance, 2x vanilla extract, 4x chocolate chips - it's a really terrible thing. My boyfriend always tells me I have a problem, but he doesn't realize I have nightmares about running out of things mid-recipe.

  8. Wow those look great! I'd never expect those muffins to look like that from a boxed cake mix.

  9. Serendipity, I guess. I made some carrot cake muffins for the kids yesterday, pure box mix. I didn`t have anything on hand to punch it up. Would making an apple crisp using packages of maple and brown sugar Quaker oats count as improving? LOL It was pretty good, I have to say.

    Yep, I hoard. Always buy an extra. Let me tell you, when cake mixes are on sale, I buy 10 to 20 boxes. Looks a little insane when checking out, but if you make a lot of cake pops, etc. then saving $$ when you can is a good thing ;)

  13. I definitely have "emergency" cake mix and brownie mix at all times. I always worry that whatever baked good I promise to bring somewhere will be a colossal failure and I'll have to resort to it!

  25. Wow, those look like DARN good muffins. I didn't know you go make muffins from a cake mix, but I did know that you can make some excellent brownies (or blondies) from cake mix! Some of the chewiest, gooiest brownies you'll ever have too...

    So that's got me thinking - what CAN'T you make with cake mix?

  27. We have to be hoarders. Nothing worse than having to run to the store when you want to bake something. Maybe you could cut the sweetness if the crumb topping was made with part of the cake mix, butter, cinnamon plus oats. Just a thought.
