thai noodle soup

Alright, it's time for winter to move along now. I'm tired of the snow, I'm tired of the cold. I need a second mortgage for my heating bill this year. Last year us New Englanders had a pretty rough winter and we all promised, rather comforted ourselves with the fact that we would be blessed with a warm, sunny spring and easy summer. Did that happen? No. We got a rainy cold spring and an even rainier (is this a word?) summer. So basically it feels as if we've been through one very lonnnnnnng double winter. I know the sales at our local tanning salons are up, way up. People are craving that heat and sun, myself included. My bones are just so cold this winter. Soups and tanning salons do help a lot to warm them up. So does a whirlpool tub, but I have to wait a while before I have the money to re-do my bathroom.
I stole this recipe from Kevin over at Closet Cooking. When I saw this I instantly knew it would warm up the bones. Plus this soup is filled with a a lot of healthy ingredients. Serve this baby hot and you will feel renewed! This is a terrific soup for cold ass freezing winter.
I made a few slight changes to the recipe.

thai chicken noodle soup
From closet cooking (makes 4-6 servings; served 3 in my house)

1/2 pound rice noodles
6 cups chicken stock (I used 5 cups)
1 pound chicken breast (cut into bit sized pieces)
1 carrot, sliced thinly on an angle (I used 2 carrots)
2 stalks lemongrass, peeled & chopped
2 kaffir lime leaves, thinly sliced (couldn’t find these)
2 birds eye chilies, sliced
2 cloves garlic, chopped
1 thumb sized piece galangal or ginger, grated
1/2 pound baby bok choy, separated
4 ounces shiitake mushrooms, de-stemmed & sliced (I used 6 oz. as I LOVE these)
1/4 cup coconut milk (I used 1 cup)
2 tablespoons fish sauce (I used 3 TB)
1 lime, juice & zest
pepper to taste (I added salt too)
1/4 cup cilantro, chopped
2 green onions, sliced

Bring a pot of water to a boil and remove from heat.
Add the noodles, cover and let sit until cooked al dente, about 5-8 minutes.
Drain and rinse in cold water.
Meanwhile, bring the chicken stock to a boil in a large pot.
Add the chicken, carrots, lemongrass, kaffir lime leaves, chillies, garlic, galangal and simmer until cooked, about 5-8 minutes.
Add the bok choy, and shiitake mushrooms and simmer until the bok choy just wilts, about 1-2 minutes.
Reduce the heat and mix in the coconut milk, fish sauce, lime juice & zest, salt and pepper.
Taste and adjust the seasoning as required.
Remove from heat and mix in the noodles, cilantro and green onions

  1. We had such a crappy rainy summer here, too. It stunk. And now we are under 24 + inches of snow. WTF!

I love Thai food, but can't seem to order anything other than Pad Thai when I go. This looks delish!

  3. Come visit us west coasters! Though we're not covered in snow or ice, it still gets chilly at night so I could certainly appreciate this soup. Looks amazing.

  4. Heh, so I'm guessing you're not excited about the storm that's about to hit Boston, huh? :D Although I'm not sure how much you'll get out east there...

But the soup looks great! I've never cooked any Thai stuff before.

  9. I know what you mean. We've been having really rough rain here in LA for the past few weeks. I hate being cooped up inside. Short term cabin fever maybe? hahaha... Nicely done with the soup. I guess one of the good things about winter is the amount of soup we can cook up. ;-D

  17. Change the chicken to tofu and the fish sauce to soy and I could eat that every single day for the rest of my life and be happy. Great job on the photo. I think soup is difficult to photograph well and yours looks terrific.

  20. I'm not much of a soup person, but I love rice noodles in soup!

I'm so tired of snow too. Luckily, it hasn't been so bad this year, but it's definitely been freezing!!

  21. Fabulous soup, Dawn! I had to spend a hour on a pond interviewing ice fishermen this morning and now I'm wishing I went straight to your house afterwards for a warm bowl of comfort.

Hope you're enjoying the new house! I finally missed blogging so much that I couldn't take it any longer. All work and no play was just...all work.

  22. Saw the update and facebook and thought I should come take a look-see! Yeah, the cold and snow has to go. The pile on my deck is about 2.5 feet deep and we have already had a few days of thaw and melting. I just want 60 degrees and I can fire up the Weber and make a steak, or a burger, or some grilled chicken. I'm so over winter

  23. I'm tired and cold too. This looks like just the ticket to warm me up! Maybe this is a preview to a beautiful Spring!

  29. That looks delicious. I just happen to have some bok choy in my fridge. Hum.

I am looking forward to summer too. But you know as soon as the weather gets warm I feel like I have to be outside all the time. I need to get a few more winter/indoor projects done. That is probably what is keeping my hopefulness of Spring at bay.

  30. Oh that looks so good. That style soup is my current winter favorite

  32. This looks perfect on a cool night. Oh and that video you sent me? OH MY GOSH...yea, reminds me of SOMEONE. That was way too funny...man that guy was conked out. But I probably won't go as far as getting a little bed for Quincy. Although...they do have their own boxes they sleep in. UGH! I am terrible. Lolol! Thanks for sharing that! Loved it, Dawn!

  33. You can come to Tampa anytime girl to warm your little bones up. Well actually it was in the 50's today..so I suppose it isnt that warm.

  34. Why is it that all the anonymous posters ask if anyone's tried the recipie?

  35. This thai soup looks so warming and delicious. You always have a place to stay should you come out here to Cali...we have a bit of rain, but it is a lot warmer!

  36. This looks AMAZING! I reall love all the flavors of this soup. Excellent photo Dawn.

  37. I want bowls and bowls of this! The only things that are keeping me from total snow insanity are the Christmas break in the Philippines and the many, many delicious soups in existence. Thai noodle soup is right up at the top! As sun therapy, this is probably a lot healthier than a tanning bed.

  38. The picture of this soup is incredibly mesmerizing. And, I agree about the snow needing to move somewhere else. Here in the midwest, we have had enough, and not nearly as much as you guys. For the food, coconut milk, fish sauce, and cilantro are the perfect thai combo.

  39. This is so perfect right now! Just might get us all through the rest of the winter. Great photos!

  40. Everything is better thai style!

  43. In my country(malaysia) this is called as tomyam(thai soup) which is an assimilated food from thailand. We have all kind of tomyam here; the white one(the one you made), chiang mai tomyam(red, hot and spicy...my fav), and the one without the coconut milk. we have abundant of kaffir lime here and tomyam can barely does it miracle without it. Well for what's worth, it's my all time favourite dish. you can add in shrimps or squid. they taste good with it :)

  44. Your Thai noodle soup looks great! I really liked how fresh and light it is. It is perfect to brighten up a cold winter day!

  53. I love how the image of the soup from above sort of resembles a road map...or perhaps the parts of a human cell ;) Very vibrant!

    ReplyDelete
  54. Ooooh, this is great and so quick!! Esp. if you cheat on the chicken stock. We tossed in defrosted pre-cooked shrimp at the very end (a large handful per person), and it was a hit. The mix of flavours is just right...I love lemongrass any day of the week...

  55. the soup looks perfect. this time, i really go to sleep; but i am happy that i found your blog and i cannot stop to look at your pictures and recipes. i would like to be again in LA (I spent some holiday there, and my husband nearly 15 years)

  56. Excellent! I made this last night, with a few minor variations because the recipe seemed to be asking to be tampered with. It was fabulous, and a couple of my coworkers eyed my lunch enviously today.

    It's also fairly low-calorie.
