the ultimate peanut butter cookie

pb cookies 1 4-22-2009 4-40-40 PM 1600x1200 There really is nothing quite like a good, I mean a good, peanut butter cookie. I've noticed, there are so many varieties of peanut butter cookies out there; the list keeps growing on the diversity out here in food-bloggerland. There are raw, flourless, all natural, no bake, no peanut-peanut butter cookies, I mean I could go on and on here. My latest batch of peanut butter cookies comes inspired from the idea of making a flourless peanut butter cookie as Joy the Baker did. But I used flour, just not that much; I needed a little bit in my pb cookie to make it just a bit heartier, denser, chewier--you with me?

'almost flourless' peanut butter cookies
(sort of adapted by The Gourmet Cookbook & Joy the Baker)

1 cup smooth-type peanut butter* (no oily peanut butters!)
¾ cup dark brown sugar
¼ granulated sugar
1 egg
1 teaspoon baking soda
2 TB flour
1 ts sea salt
Bittersweet chocolate chips, about ½ cup, optional
Sea salt for sprinkling, optional In a small bowl add the flour, baking soda and salt and mix, set aside.
In a mixer or by hand, combine peanut butter and sugars until well combined. Crack egg open in a small bowl and beat. Add egg to the cookie mixture; add in the flour mixture but by sprinkling it over the cookie dough, not just depositing it in one large dump. Mix till combined. Cover bowl and let it sit in fridge for about two hours or more (mine did fine overnight). When ready to bake, preheat oven to 350 degrees F. Roll into tablespoon sized balls and place on non-stick cookie sheets or greased cookie sheets. With a fork gently make a criss-cross pattern with a fork. Bake for 10 minutes, until lightly browned. As soon as they come out of the oven sprinkle with just a bit of sea salt—this adds a nice peanut depth; this is optional. (If you want to add in a chocolate topping like I did, don’t make a cross-cross pattern, but rather make a small well. Bake those half way (about 5 minutes) then add in about 4 chocolate chips and bake remaining 5 minutes or so. The chocolate part is optional, but luscious.) Cool on a baking sheet for a while. Should make about 23 – 25 cookies.
*please use a creamy, not oily peanut butter. I used whole foods 365 organic creamy peanut butter, it has the perfect texture for these cookies.

  7. I love peanut butter, but there are way too many recipes out there! I've never tried flourless or almost flourless because for some reason, it feels kinda weird when there's not flour.. maybe I'm weird..

    Omg! I can't believe you were a victim of blog theft. I mean, your pictures are amazing so I'm not surprised, but for people to actually steal?! Don't ever leave us Dawn, where are we going to do without all your crazy creations!?

    I am sorry you had to go through all of that trouble with your blog. I was pretty ticked too! Some people just urk me. I never thought I would have to worry about that, but I guess we all do.   17. Didn't you basically get this recipe from Joy the Baker's blog? She posted nearly the exact same thing last week. That's very similar to stealing, when you take other people's recipe ideas.

    Thanks for the info on your kitty. Mocha still has an appetite and when she doesn't like the canned stuff (which is rare) I cook her up some chicken breasts with a little salt. :) We'll see what happens tomorrow when I get the results.

  30. These look wonderful! Sorry about your experience with the content thief. I have been a webmaster for 11 years, far longer than I have been blogging, and have dealt with my fair share of that!

    As for Anonymous and their comment - NO it's not like stealing. She gave credit to Joy the Baker AND she changed the recipe, therefore it's not stealing.

    I'm so sorry about the plagiarism situation... I hope you have fized it and that I won't happen again. I'm apalled at the amount of plagiarism out there, I've found a couple of sites stealing for some other blogs I read and I've immediately advised the blog owner. I don't know how much can be done, though... I'm glad you took action!

  43. Chewy cookies are the greatest. Unless it is a dunker cookie then I prefer a crunchier cookie.

    The idiots who are thief should be shot. How hard is it to send an e-mail asking permission? Plus not like any of us are getting rich off of blogging anyways so what is their motivation?

  46. YUM! I'm totally with you Dawn. There's not much better than an amazingly good PB cookie. I like that you added a bit of flour; I need that chew in my cookies, too. These look amazing--especially with that dollop of chocolate on top. AMAZING. Can't wait til exams are over and I have plenty of time to bake, bake, bake (not to mention, catch up on the 700 new blogposts in my google reader :) )!

  55. Hey Dawn! Just wanted to write you back about Mocha. Mocha is eating normally...in fact she's always hungry, drinking normally....doesn't seem any different besides the weight loss. She seems to complain a little more lately. Am wondering if she's a bit uncomfortable. So, she hasn't lost her appetite yet. Am hoping that's a good sign! She purrs still...kneads her blanket. If it's anything, hoping I caught it early enough? Thanks for thinking of us. :)

Your recipes look divine (I really want to do some baking, but don't trust myself around chocolate, so need to wait for a group to try some recipes)and so incredibly creative!

    However, what I love the most are your pictures. Whenever I look at the photos, I feel like I can taste the ingredients and smell the fragrance.

  79. I absolutely love this cookie recipe. I think I've made it about 5 times in the last couple of months! It's really brilliant. I work as a cook and I've made them for my bosses and they think it's amazing! (Don't worry we're not going to use them to sell or anything...as if they'd ever make it out of the kitchen with all of us eating them). I love it's simplicity and strong flavour.
    You're great! Keep it up. Don't let blog thieves get you down. There's always a way to get them. I knew a guy whose jewelry designs were being stolen by a woman in Scotland (we're in Australia) but I just emailed around to the places that were hosting her products and they shut her down. Plagiarism is not cool!

  80. I just made these for my husband on Father's Day. They are the best PB cookies I've ever had, and they worked perfectly on the first try! The sea salt + pb is wonderful.

  83. Snowed in here in Colorado today and it seemed only right that I should make cookies :-) Delish, truly! I stuck my dough in the freezer for 45 min and they came out just fine. Because like @gharkness, I couldn't stand having cookie dough around for too long :-)

I followed your exact recipe (which I don't usually do)I was unsure about the salt but it gives so much more flavor to the peanuts! Thank You Thank You for sharing this!

  86. I love this recipe so much!!! Yum thank you, its my second time making them in one week!!! I humbly made 2 slight variations; I only put 3/4 cup of brown sugar, and added just a little bit of melted butter to the dough....I though it made them softer and hold together a little better. My friends quickly devoured the few cookies that I didn't!

  89. I love this recipe, it is brilliant. I have tried it numerous times now, I even baked a bunch and took it home to Germany for my nieces, with whom I baked the recipe again.. where I learned new baking lessons (when baking with a 5 year old and 7 year old... just breath and go with the flow).
    I have to confess, I was a bit cheeky, I used the base of your recipe, substituted peanut for almond butter, added some roasted, salt, skinned almonds and the left over chocolate chips that needed using up
