
Are there any other sauce junkies out there? What is your favorite or favorites?
Steak Diane (I have no idea who the original owner of this recipe came from)
2 (6 oz) Filet Mignons (I used sirloin steak this time, worked fine)
1/8 ts salt
1/8 ts freshly ground pepper
2 TB butter
3 ts Dijon mustard
2 TB Shallots, minced
2 TB Butter
2 TB Lemon juice
1 TB Worcestershire sauce
1 TB Fresh chives, minced
3-4 ts Cognac (use the good stuff)
1 TB Fresh parsley, minced
Season both sides of steak with salt and pepper.
Melt 2 TB butter in a heavy skillet; add steaks and cook approximately 4 minutes on each side for medium-rare; about 2 minutes longer per side for medium.
Remove steaks to serving plate and keep warm.
Add into pan drippings, mustard and shallots. Sauté over medium heat 1 minute.
Then 2 TB butter, lemon juice, Worcestershire sauce and chives.
Cook for 2 minutes. Add brandy; pour sauce over steaks.
Sprinkle parsley over the top.
Serves 2.
Serve with thin crispy french fries--a must!

I'm a sauce junkie too, and this looks delish. I had steak on Sat night and it was so dry and sauce-less. Blech! Next time I'm just coming to Chez Dawn. :)

Steak Diane is my idea of a perfect steak. Yours looks like heaven and is making me drool here at breakfast time. I really need to make some sweet potato fries. I think I might even get my son to try those. Gorgeous photos, Dawn.
A steak to me is not complete unless it has a nice simple pan sauce that compliments the flavors and takes great use of the stuck bits. Unfortunately no jar sauce is ever going to duplicate that wonderful taste.

This meal was DEVINE!!! I miss my steak!! This is one of my top meals..Great..now I"m thinking about that shrimp dish..tiki is looking at me, and he remembers it too!! In fact the whole time I at it, he sat on his perch and looked at me...LOL But seriously, your steak is tremendous!!!
Oh yeah, this looks awesome. I honestly couldn't tell you my favorite sauce, but I am really in love with salsas. I could put them on everything, lol.
Mmmm, that looks wicked good. I haven't had steak diane in ages. I don't think I could pick a favorite sauce, too many are too good.
MMMMMM...I love steak Diane! I raraly eat beef but i love this sauce!! I combine this sauce with pork instead!

I am a sauce freak. If I cook some sort of meat in a pan I will always make some sort of sauce from the pan junk! I love ANY sauce. The more fat the better

Sauces can make or break a meal. I love them! And I love your steak diane!! My mouth is watering like mad, and sweet potato fries-yum!!
It's the Worcestershire and Cognac that do it for me...each & every time.
I like sauce but it depends. I've not had either of the two you mentioned. Most likely because I'm not a steak eater. Ask me about salad dressing....I'm your gal.
I've taken note of your recipe as the rest of my family are steak eaters and the saucier the better!

I really love sauce on everything - even things that don't really need sauce. I think this is the only way I truly enjoy steak...with loads of sauce!

Oh no... Now it's going to appear like the only sauce I can recognize is tomato ketchup :P Here we're not too familiar with French saucier traditions, so I can't really remember them. Plus, dairy not so huge. BUT the steak looks awesome, and I would mop all that sauce up in a heartbeat!

What a great meal! I love steak diane also and love all kinds of sauces too! Bearnaise is definitely one of my favorites!

This looks delicious Dawn. I don't think I have ever had Steak Diane and I am not even sure I have had Bernaise sauce....but I would love to try them sometime! I am a sauce junkie. I love tomato sauce. I can eat it plain right out of a bowl, and anything involving vinegar, I can pretty much drink.

This looks delicious! I've been making my own steak sauce lately, using a Bobby Flay recipe. It's actually quite easy, and so much better than store bought.

Okay, so, you have to understand that I don't really care about meat. I eat it; I like it okay, but I can take it or leave it. Then, we get to steak diane. And that's where my apathy starts to waiver. I ADORE steak diane. There's something about that mustardy sauce and the melty, tender steak that just totally floats my boat. Delicious!
Yes, sauce is what it's all about, and that powder in a packet isn't sauce, no matter what you add to it.

Ive even thought of going to culinary school so I could be a saucier(is that what their called?)My fav is hollandaise w/cold roasted asparagus...YUM :0)
