Are there any other sauce junkies out there? What is your favorite or favorites?
Steak Diane (I have no idea who the original owner of this recipe came from)
2 (6 oz) Filet Mignons (I used sirloin steak this time, worked fine)
1/8 ts salt
1/8 ts freshly ground pepper
2 TB butter
3 ts Dijon mustard
2 TB Shallots, minced
2 TB Butter
2 TB Lemon juice
1 TB Worcestershire sauce
1 TB Fresh chives, minced
3-4 ts Cognac (use the good stuff)
1 TB Fresh parsley, minced
Season both sides of steak with salt and pepper.
Melt 2 TB butter in a heavy skillet; add steaks and cook approximately 4 minutes on each side for medium-rare; about 2 minutes longer per side for medium.
Remove steaks to serving plate and keep warm.
Add into pan drippings, mustard and shallots. Sauté over medium heat 1 minute.
Then 2 TB butter, lemon juice, Worcestershire sauce and chives.
Cook for 2 minutes. Add brandy; pour sauce over steaks.
Sprinkle parsley over the top.
Serves 2.
Serve with thin crispy french fries--a must!
I'm a sauce junkie too, and this looks delish. I had steak on Sat night and it was so dry and sauce-less. Blech! Next time I'm just coming to Chez Dawn. :)
ReplyDeleteAs a said to you on Facebook...
ReplyDeleteI see SWEET POTATO FRIES!!!!!! :-D
I love sauces - I smother everything.
Steak Diane is my idea of a perfect steak. Yours looks like heaven and is making me drool here at breakfast time. I really need to make some sweet potato fries. I think I might even get my son to try those. Gorgeous photos, Dawn.
ReplyDeleteA steak to me is not complete unless it has a nice simple pan sauce that compliments the flavors and takes great use of the stuck bits. Unfortunately no jar sauce is ever going to duplicate that wonderful taste.
ReplyDeleteNicely done!
i just sent my husband this link telling him i want to make it! those fries look so yummy too!
ReplyDeleteWow- looks great! Was this your easter meal? This beats the heck out of ham!
ReplyDeleteLooking GOOD!!!

ReplyDeleteOh yeah, this looks awesome. I honestly couldn't tell you my favorite sauce, but I am really in love with salsas. I could put them on everything, lol.
ReplyDeleteMmmm, that looks wicked good. I haven't had steak diane in ages. I don't think I could pick a favorite sauce, too many are too good.
ReplyDeleteI don't do steak but I will eat a plate full of those fries! YUM!
ReplyDeleteI am a saucy girl on occasions:)
Oooo...I'm always up for a good steak. And with sweet potato fires. I'l give this a triple yum!!! One for each steak and the fries.

ReplyDeleteOh that looks like it should be on my table now! I think we are having cereal tonight.......
ReplyDeleteThought you should know that I was catching up on my blog reading and I bookmarked every one of the last four recipes you posted... and I'm thinking about making this one this weekend! I love steak in general, but the picture really did it for me this time.
ReplyDeleteCan I please come live with you? This is my favorite steak - EVER!
ReplyDeleteI'll have some steak dawn please....
ReplyDeleteCan't help but drool! It looks sooo good!
ReplyDeleteI am a sauce freak. If I cook some sort of meat in a pan I will always make some sort of sauce from the pan junk! I love ANY sauce. The more fat the better
ReplyDeleteThis looks wonderful - I love sauces and they are not allowed be come from powder. Love Steak Diane.. tired of chocolate Easter eggs and jellybeans...
ReplyDeleteLooks super good!!!
ReplyDeleteSauces can make or break a meal. I love them! And I love your steak diane!! My mouth is watering like mad, and sweet potato fries-yum!!
ReplyDeleteIt's the Worcestershire and Cognac that do it for me...each & every time.
ReplyDeleteI like sauce but it depends. I've not had either of the two you mentioned. Most likely because I'm not a steak eater. Ask me about salad dressing....I'm your gal.
ReplyDeleteI've taken note of your recipe as the rest of my family are steak eaters and the saucier the better!

btw, thanks for visiting my blog!
I really love sauce on everything - even things that don't really need sauce. I think this is the only way I truly enjoy steak...with loads of sauce!
ReplyDeleteI love sauces and all kinds of condiments!
ReplyDeleteThis looks wonderful.
Absolutely gorgeous. I am saving this for my next filet mignon purchase..
ReplyDeleteOh no... Now it's going to appear like the only sauce I can recognize is tomato ketchup :P Here we're not too familiar with French saucier traditions, so I can't really remember them. Plus, dairy not so huge. BUT the steak looks awesome, and I would mop all that sauce up in a heartbeat!
ReplyDeleteSteak Diane is one of my absolute favorites! This is beautiful, just beautiful.
ReplyDeleteooh dawn - may i add you to my blogroll? your blog is incredible - it's so pretty, just like you and your name! :)
ReplyDeleteWhat a great meal! I love steak diane also and love all kinds of sauces too! Bearnaise is definitely one of my favorites!
ReplyDeleteI am a sauce junkie, a sauce with goat cheese and chives floats my boat as does this steak diane of yours!
ReplyDeleteWe just made this as our Recipes to Rival challenge & it was so good
ReplyDeleteso...who's diane and why does she get this awesome dish named after her???
ReplyDeleteMy husband's dream dinner....
ReplyDeleteThis looks delicious Dawn. I don't think I have ever had Steak Diane and I am not even sure I have had Bernaise sauce....but I would love to try them sometime! I am a sauce junkie. I love tomato sauce. I can eat it plain right out of a bowl, and anything involving vinegar, I can pretty much drink.
ReplyDeleteOh that looks so good. I would love to make that sauce. Thanks for the recipe!
ReplyDeleteoh wow, this looks amazing. i too love all sauces (my husband doesn't like a lot of sauce, so there's always extras for me!)
ReplyDeleteLooks amazing - now I'm craving steak!!
ReplyDeleteWe're looking for a good way to cook a steak. Thanks for this!
ReplyDeleteThis steak looks outstanding and the sauce seems so simple to make. Can't wait to try it myself. And you paired the steak with my FAV - Sweet Potato Fries - YUM
ReplyDeletehow did you get that deep red color on the fries. They look better than the steak ;)
ReplyDeleteI totally agree with Maryann, your photos are terrific.Get me a fork, knife, and a napkin and I'm ready to go!
ReplyDeleteOh I was going to say..Forget steak Diane, this is steak Dawn!!
ReplyDeleteWow, that is some good looking steak. And do I see sweet potato fries? Love them.
ReplyDeleteThis looks delicious! I've been making my own steak sauce lately, using a Bobby Flay recipe. It's actually quite easy, and so much better than store bought.
ReplyDeleteOh this looks heavenly... and those fries in the back are perfect with this!
ReplyDeleteThat sauce sounds so tasty! And look, it's sweet potato fries! My favorite!
ReplyDeleteOkay, so, you have to understand that I don't really care about meat. I eat it; I like it okay, but I can take it or leave it. Then, we get to steak diane. And that's where my apathy starts to waiver. I ADORE steak diane. There's something about that mustardy sauce and the melty, tender steak that just totally floats my boat. Delicious!
ReplyDeleteYes, sauce is what it's all about, and that powder in a packet isn't sauce, no matter what you add to it.
ReplyDeleteMy favorite is a steak bearnaise, with matchstick frites:
